Salamandre Wine Cellars specializes in Chardonnay from two distinctive vineyards in the Santa Cruz Mountains (Matteson Vineyard) and in Arroyo Seco (Arroyo Seco Vineyard). Burrowed into a coastal redwood canyon and tiny even by Santa Cruz standards, Winemaker Wells Shoemaker and partner Dave South use intensive traditional methods by choice - and, yes, by necessity - while striving to make elegant wines in the Mersault style.
Hidden in a cool redwood canyon in Aptos, near the coast of Monterey Bay, Salamandre Wine Cellars specializes in sophisticated Chardonnay from two remarkable vineyards.
Salamandre's small scale production requires meticulous attention to details, starting with earnest communication with the vineyardist. Selective hand picking, old fashioned basket pressing, and individual barrel supervision combine to produce wines with exceptional intensity of fruit and complexity of flavor.
Awards are a fact of life at Salamandre. These are achieved despite the fact that the winery boasts few mechanized processing tools. Winemaker Wells Shoemakermonitors the wines with the same hands-on watchfulness that he uses in his "daytime job" as a pediatrician.
Salamandre also makes small lots of other varietals from special vineyards in the Santa Cruz Mountains and Monterey County. Gewurztraminer, Sauvignon blanc, Pinot noir, and blended reds may be nurtured a few barrels at a time.
